- Add the cashews to a bowl and cover with boiling water. Set aside to soften.

- Add to a baking sheet lined with parchment paper and roast for 25-30 minutes.
- While the cauliflower is roasting, add slaw ingredients to a bowl. Toss well to combine.
- Once cashews have softened, blend with crema ingredients, adjusting water as needed.
- Assemble tacos with cauliflower, slaw, pico de gallo, avocado, and crema.
- Serve with cilantro lime rice and black beans. Enjoy!
