Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix the ricotta cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the ricotta mixture, stirring until just combined.
  5. Fold in the chopped toasted pistachios, ensuring they are evenly distributed throughout the dough.
  6. Using a tablespoon, scoop out portions of the dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Allow the wafers to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
