- Gradually add the dry ingredients to the ricotta mixture, stirring until just combined.
- Fold in the chopped toasted pistachios, ensuring they are evenly distributed throughout the dough.
- Using a tablespoon, scoop out portions of the dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow the wafers to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
