Ingredients
  

For the Cookies
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups cake flour or all-purpose with cornstarch
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
For the Filling
  • 1/2 cup unsalted butter softened
  • 1 cup light brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 cup cake flour
For the Glaze
  • 1 cup powdered sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons melted butter
  • 2 tablespoons milk

Method
 

  1. Cream the butter and sugars until light and fluffy. Add the eggs and vanilla, then mix in the dry ingredients. Chill for at least 1 hour.
  2. Mix together softened butter, brown sugar, cinnamon, and flour. Roll into small balls (about 2 teaspoons each) and set aside.
  3. Scoop out 1/4 cup portions of dough and split each in half. Press one half into a disc, place a filling ball in the center, and cover with the other half. Seal and roll into a smooth ball.
  4. Bake at 350°F (175°C) for 11–13 minutes, or until edges are set and lightly golden. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
  5. Whisk together glaze ingredients and drizzle over the cooled cookies. Let the glaze set for 15 minutes.

Notes

These cookies are a delicious treat that can be customized with different fillings. For a unique twist, try adding a pinch of nutmeg to the filling.
