- Coarsely grate the sweet potatoes.

- Mix until well incorporated to form a batter.
- Heat oil in a large skillet over medium heat.
- Scoop heaping tablespoons of mixture onto the hot oil.
- Flatten with a spatula to form patties. Cook for 3-4 minutes per side until browned.
- Transfer browned hashbrowns to a baking sheet.
- Bake in preheated oven for 10-12 minutes.
- Serve hot with a dollop of sour cream.
