Ingredients
  

Sweet Potato Hash Browns
  • 2 tbsp vegetable oil or any neutral oil like canola
  • 2 tbsp grated onion
  • 1 large sweet potato peeled
  • 2 eggs large, preferably free-range
  • 1 tbsp all-purpose flour I always use King Arthur
  • 1/4 tsp kosher salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Coarsely grate the sweet potatoes.
  3. Place grated potatoes into a bowl of cold water, swirl, then drain.
  4. Squeeze out excess moisture using a kitchen towel.
  5. In a medium bowl, combine potatoes, onion, eggs, flour, salt, and pepper.
  6. Mix until well incorporated to form a batter.
  7. Heat oil in a large skillet over medium heat.
  8. Scoop heaping tablespoons of mixture onto the hot oil.
  9. Flatten with a spatula to form patties. Cook for 3-4 minutes per side until browned.
  10. Transfer browned hashbrowns to a baking sheet.
  11. Bake in preheated oven for 10-12 minutes.
  12. Serve hot with a dollop of sour cream.

Notes

For extra crispiness, make sure to squeeze out as much moisture as possible from the grated sweet potatoes. Serve these hash browns as a side dish or enjoy them as a delicious breakfast treat.
