  • 8 oz cream cheese softened
  • 1/2 cup crushed pineapple drained
  • 1-2 jalapeños finely chopped
  • 1/4 cup green onions chopped
  • 1/4 cup pecans chopped
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • fresh cilantro for garnish, optional

Method
 

  1. In a mixing bowl, blend the softened cream cheese until smooth.
  2. Stir in the crushed pineapple, jalapeños, green onions, pecans, honey, lime juice, salt, and pepper. Mix until everything is evenly distributed.
  3. Transfer the mixture onto a sheet of plastic wrap and shape it into a tight, even log. Wrap fully and refrigerate for at least 2 hours, or until firm enough to slice.
  4. Unwrap and place the chilled cheese log on a serving platter.
  5. Garnish with fresh cilantro if desired, and serve with crackers or sliced baguette.
