Method
- Line a cookie sheet with parchment paper or tin foil.
- Put the sugar cookies into a food processor and pulse until they are fine crumbs.
- Add the sugar cookie crumbs and softened cream cheese into a mixing bowl. Combine well.
- Roll about 1 tablespoon of dough into a ball and place on the prepared cookie sheet. Freeze for 10 minutes.
- Microwave the melting wafers according to package directions. Stir every 30 seconds.
- Use a plastic fork with the two center prongs broken off to dip the truffles in the melted wafers. Tap off excess and place on cookie sheet.
- Place coated truffles back in the freezer for 5 minutes.
- Drizzle extra melted wafers over the truffles and sprinkle with sprinkles.
- Store truffles in the fridge until ready to serve. Keep leftovers in the fridge.
