Ingredients
  

Brownies
  • 1 box strawberry cake mix with pudding in the mix We used Pillsbury
  • 2 large eggs
  • cup vegetable or canola oil 80 ml
  • 1 teaspoon vanilla extract 5 ml
Glaze
  • ¾ cup powdered sugar 90g
  • 2 tablespoon strawberry preserves 40g – Bonne Maman is the best!
  • 1 ½ tablespoons milk 22 ml
  • 1 tablespoon cream cheese 15g – optional

Equipment

  • 8×8 pan

Method
 

  1. Preheat oven to 350 degrees F. Spray an 8×8 pan with nonstick spray or line with foil.
  2. Mix strawberry cake mix, eggs, oil, and vanilla extract in a large bowl.
  3. Press mixture into the prepared pan and bake for 18-22 minutes, until just done. Let cool completely.
  4. In a small bowl, whisk together powdered sugar, strawberry preserves, cream cheese (if using), and milk.
  5. Spread the glaze over the cooled strawberry brownies.

Notes

Feel free to experiment with different types of preserves for the glaze. The cream cheese in the glaze is optional, but it adds a nice tangy flavor. Ensure the brownies are completely cooled before glazing to prevent the glaze from melting.
