Ingredients
  

For the Potato
  • 2 large russet potatoes
  • 2 tbsp olive oil
  • ½ tsp sea salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • 2 tbsp butter
  • ½ cup shredded cheddar cheese
  • ¼ cup Monterey Jack cheese
  • 2 tbsp sour cream for serving
  • 1 tbsp chopped parsley for garnish
For the Steak
  • ¾ lb sirloin or ribeye steak sliced thinly into strips
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Cajun seasoning
  • ½ tsp steak seasoning
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
For the Shrimp
  • ½ lb large shrimp peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp Cajun seasoning
  • ½ tsp smoked paprika
  • ½ tsp lemon pepper
  • 1 squeeze lemon juice
For the Veggies
  • ½ green bell pepper sliced
  • ½ red bell pepper sliced
  • ½ onion sliced
  • 1 tbsp olive oil
  • 1 pinch salt & pepper
For the Cajun Cream Drizzle
  • ¼ cup mayonnaise
  • 2 tbsp sour cream
  • tsp Cajun seasoning
  • 1 tsp hot sauce
  • 1 tsp lemon juice
  • 1 tsp honey
  • 1 tbsp warm water to thin, if needed

Method
 

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry potatoes, then rub with olive oil, salt, and pepper.
  3. Pierce several times with a fork.
  4. Bake at 400°F (200°C) for 55–65 minutes, until fork-tender.
  5. Slice lengthwise, fluff the inside with a fork, and mix in butter and shredded cheese. Keep warm.
  6. In a skillet over medium heat, add olive oil.
  7. Sauté onions and peppers for 6–8 minutes until soft and lightly charred.
  8. Season with salt and pepper. Remove and set aside.
  9. In the same skillet, add oil and butter.
  10. Add steak strips, sprinkle with seasonings, and sear for 2–3 minutes per side until browned but juicy.
  11. Remove from heat and cover to rest.
  12. Add oil to the same pan, toss in shrimp and seasonings.
  13. Cook 1–2 minutes per side until pink and slightly crisp on the edges.
  14. Drizzle with lemon juice.
  15. In a small bowl, whisk together mayonnaise, sour cream, Cajun seasoning, hot sauce, lemon juice, and honey.
  16. Add warm water as needed to thin to drizzle consistency.
  17. Place cheesy potato halves on a plate.
  18. Layer sautéed peppers and onions on top.
  19. Add steak slices and shrimp over the vegetables.
  20. Drizzle generously with Cajun cream sauce.
  21. Garnish with parsley and serve hot.

Notes

For extra flavor, consider marinating the steak in Cajun seasoning overnight. Adjust the level of spiciness by altering the amount of hot sauce used in the Cajun cream drizzle.
