Sheet Pan Smoked Sausage Cranberry Bites

Ingredients
  

Main Ingredients
  • 1 pound smoked sausage
  • 8 ounces white cheddar cheese
  • 15 ounces whole cranberry sauce 1 can
  • 1 tbsp parsley snipped

  • Rimmed Baking Sheet
  • Parchment Paper
  • Skewers

Method
 

  1. Preheat oven to 400°F. Line rimmed baking sheet with parchment paper. Cut cheese into 30 same-size cubes. Separate 30 whole cranberries from the sauce. Set aside.
  2. Cut sausage link into 1/2-inch slices. Place in a single layer on baking sheet.
  3. Bake 15 – 20 minutes until sausage is starting to brown around the edges. Keep an eye on the sausage – thinner slices will brown faster.
  4. Remove pan from the oven and top each sausage with a cheese cube.
  5. Top each cheese cube with a whole cranberry. Place skewer thru the top into the sausage.
  6. Place assembled bites onto a serving platter, and sprinkle with parsley. Serve with remaining cranberry sauce on the side.

Notes

These bites are a great make-ahead appetizer. You can prepare them up to the point of baking and store them in the refrigerator until ready to bake. Adjust the baking time as needed if the sausages are thicker or thinner.
