  • 1 lb turkey sausage sliced into ¼-inch rounds
  • 1 large green bell pepper sliced
  • 1 medium yellow bell pepper sliced (optional)
  • 1 large yellow onion sliced
  • 1 cup cherry tomatoes halved (or 1 medium tomato, diced)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon salt or to taste
  • 1 teaspoon Cajun seasoning optional
  • 2 cups cooked white rice for serving

Method
 

  1. Heat the olive oil (or butter) in a large skillet over medium heat.
  2. Add the sausage slices in a single layer. Cook for 4–5 minutes on each side, until nicely browned. Remove from the skillet and set aside.
  3. In the same pan, add the sliced onions and bell peppers. Sauté for about 5–6 minutes, until they begin to soften. Add the cherry tomatoes and cook for another 2–3 minutes, stirring occasionally, until the tomatoes start to soften and release their juices.
  4. Return the browned sausage to the skillet. Sprinkle in the garlic powder, black pepper, salt, and Cajun seasoning (if using). Stir to combine all the flavors.
  5. Let everything cook together for another 2–3 minutes, so the flavors meld and the tomato juices thicken up the mixture a bit.
  6. Spoon the turkey sausage and vegetable mixture over hot, cooked white rice. Serve right away and enjoy!

Notes

This dish is versatile; feel free to swap ingredients based on what you have available. For a spicier version, add more Cajun seasoning or a pinch of red pepper flakes.
