Ingredients
  

Rolo Twix Bites
  • 1 box Mini Nilla Wafers 11 oz
  • 1 bag Rolos 8 oz
  • 2 cups chocolate chips
  • 2 tbsp vegetable oil

Equipment

  • Baking Sheet
  • Microwave-Safe Bowl
  • Parchment Paper

Method
 

  1. Preheat your oven to 300 degrees F and line a baking sheet with parchment paper or a silicone mat.
  2. Place half the Nilla Wafers on your baking pan (flat side facing up), then add a Rolo on top of each one.
  3. Bake for 90 seconds to soften the Rolos, then immediately sandwich another Nilla Wafer on top.
  4. Transfer the baking sheet of Rolo sandwich cookies to the fridge for 10 minutes to firm the Rolos back up.
  5. In the meantime, combine chocolate chips and vegetable oil in a microwave safe bowl. Microwave in 30 second intervals, stirring between, until the chocolate is melted and smooth.
  6. Working one by one, drop the Rolo sandwich cookies into the melted chocolate. Let the excess chocolate drip off, then return to the lined baking sheet.
  7. Transfer to the fridge once more to set the chocolate coating before enjoying!

Notes

For an extra touch, sprinkle sea salt on top of the chocolate coating before chilling for a sweet and salty flavor profile. These bites can be stored in an airtight container at room temperature for up to a week.
