- In a large bowl, combine the crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, and almond extract.
- Mix thoroughly until the ingredients are well incorporated and form a sticky dough.
- Roll the mixture into small, bite-sized balls using your hands.
- Roll each ball in the extra shredded coconut to coat evenly.
- Place the balls on a tray lined with parchment paper and refrigerate for at least 2 hours to firm up before serving.
Notes
Use well-drained pineapple to prevent the mixture from becoming too wet. Chill the balls thoroughly to help them hold their shape better during serving.
