Pineapple Mixture
  • 1 1/2 cups crushed pineapple well-drained
  • 2 cups finely crushed graham cracker crumbs
  • 1 cup sweetened shredded coconut plus extra for rolling
  • 1/2 cup powdered sugar
  • 1/2 teaspoon almond extract optional, for extra flavor

Method
 

  1. In a large bowl, combine the crushed pineapple, graham cracker crumbs, shredded coconut, powdered sugar, and almond extract.
  2. Mix thoroughly until the ingredients are well incorporated and form a sticky dough.
  3. Roll the mixture into small, bite-sized balls using your hands.
  4. Roll each ball in the extra shredded coconut to coat evenly.
  5. Place the balls on a tray lined with parchment paper and refrigerate for at least 2 hours to firm up before serving.

Notes

Use well-drained pineapple to prevent the mixture from becoming too wet. Chill the balls thoroughly to help them hold their shape better during serving.
