Ingredients
  

Sweet Potatoes
  • 4 large sweet potatoes red-skinned
  • 4 tablespoons unsalted butter
  • 1 tablespoon extra-virgin olive oil or vegetable oil, coconut oil, or bacon grease
  • 1 teaspoon Kosher salt
  • Freshly cracked black pepper

Method
 

  1. Preheat oven to 425 degrees F.
  2. Wash, scrub, and dry the potatoes thoroughly. Place on a foil-lined baking sheet.
  3. Rub oil and salt all over the potatoes.
  4. Prick sweet potatoes all over with a fork.
  5. Bake until tender, about 40-60 minutes (depending on the size of your potatoes – start checking at 45 minutes).
  6. Let cool for about 5 minutes, then split the tops open with a knife and gently squeeze it open.
  7. Top with a pat of butter and season with salt and freshly cracked black pepper before serving. Enjoy!

Notes

To ensure even cooking, try to select sweet potatoes that are similar in size. Feel free to experiment with different toppings like sour cream or chives for added flavor.
