- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place flatbread on sheet and brush with olive oil.
- Layer sliced pear evenly across the top of the flatbread.
- Nestle in brie slices between the pears.
- Spoon cranberry sauce over the top in small dollops.
- Sprinkle with fresh thyme, toasted nuts, salt, and black pepper.
- Bake for 10–12 minutes until brie is melted and the edges are crisp.
- Drizzle with honey, add a few extra thyme leaves, and slice to serve.
