- In a large mixing bowl, beat cream cheese, powdered sugar, and sweetened condensed milk until smooth and creamy.
- Stir in drained crushed pineapple, vanilla extract, and half of the shredded coconut. Mix well.

- In a 9x13-inch dish, line the bottom with a single layer of graham crackers.
- Pour half of the pineapple cream mixture over the crackers and spread evenly.
- Add another layer of graham crackers on top, followed by the remaining pineapple cream.
