Filling
  • 1 (8 oz) package cream cheese softened
  • 1 (8 oz) container whipped topping thawed
  • 1 (20 oz) can crushed pineapple well drained
  • 1 cup shredded coconut
  • 1 (14 oz) can sweetened condensed milk
  • 2 teaspoons vanilla extract
  • 1 box graham crackers about 14–16 full sheets
  • 1/4 cup melted butter
  • 1/2 cup powdered sugar
  • Red and green sprinkles for decoration (optional)
  • Maraschino cherries for topping (optional)

Method
 

  1. In a large mixing bowl, beat cream cheese, powdered sugar, and sweetened condensed milk until smooth and creamy.
  2. Stir in drained crushed pineapple, vanilla extract, and half of the shredded coconut. Mix well.
  3. Gently fold in half of the whipped topping until the mixture is light and fluffy.
  4. In a 9x13-inch dish, line the bottom with a single layer of graham crackers.
  5. Pour half of the pineapple cream mixture over the crackers and spread evenly.
  6. Add another layer of graham crackers on top, followed by the remaining pineapple cream.
  7. Spread the remaining whipped topping over the top layer as a smooth frosting.
  8. Sprinkle with the rest of the shredded coconut, add sprinkles for a festive touch, and top with maraschino cherries if desired.
  9. Cover and refrigerate for at least 4 hours (or overnight) to allow the layers to set.
