Jello Cookies
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons hot water
  • 1 package flavored gelatin 3 oz, any flavor
  • 1/2 teaspoon vanilla extract
  • 1/2 cup powdered sugar for rolling

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt; set aside.
  3. In a large bowl, cream softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, hot water, and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Stir in the flavored gelatin until evenly distributed throughout the dough.
  7. Shape dough into 1-inch balls and roll each ball in powdered sugar to coat.
  8. Place the balls about 2 inches apart on the prepared baking sheets.
  9. Bake for 8-10 minutes or until the edges are set but the centers remain soft.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use a variety of gelatin flavors to create colorful, festive cookie batches. Chilling the dough for 30 minutes before baking intensifies the flavor and helps prevent spreading.
