Ingredients
  

Shortbread Dough
  • 1 cup Irish Butter unsalted, European
  • 0.5 cup sugar plus 1 tablespoon
  • 2.5 cups all-purpose flour
  • 1 Tbsp heavy cream 1-2 Tbsp, if needed

  • Parchment Paper
  • Cookie Cutter

Method
 

  1. Remove butter from refrigerator 15 minutes ahead of time to soften. Preheat oven to 300 degrees. Line baking sheets with parchment paper, set aside.
  2. Cream butter and sugar, with paddle attachment of stand mixer. Turn mixer speed to low, and slowly add flour. Mix until dough forms a ball. Add cream, one tablespoon at a time, if needed to get dough to pull together.
  3. On floured surface, roll dough out to 1/4" thickness, and cut with cookie cutter. Place on lined cookie sheets.
  4. Bake until just turning golden, about 20-25 minutes. Remove from oven, and transfer to cooling rack. Cool completely.
  5. Enjoy as is, or decorate as desired.

Notes

These cookies are perfect for tea time or as a festive treat. Using Irish butter gives them an extra rich flavor. Feel free to add a touch of vanilla or a sprinkle of sugar on top before baking for added sweetness.
