Ingredients
  

Fried Chicken
  • 1.5 pounds chicken tenders or 2 large boneless skinless chicken breasts sliced into 1-inch thick strips
  • 1.5 cups all-purpose flour
  • 1 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.25 tsp smoked paprika
  • 1 large egg beaten with 2 tablespoons water
  • vegetable oil for frying
Buttermilk Biscuits
  • 2 cups all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp kosher salt
  • 0.25 tsp baking soda
  • 0.5 cup cold butter 1 stick
  • 0.75 cups buttermilk
  • 0.25 cup unsalted butter melted
Hot Honey
  • 1 cup honey
  • 2 tsp crushed red pepper flakes
  • 1 Tbsp apple cider vinegar

Method
 

  1. For the Fried Chicken: Fill a large pot with about 2 inches of oil. Set pot to medium heat.
  2. Mix flour, salt, pepper, garlic powder and paprika in a bowl. Whisk egg and water in another dish. Dredge chicken in flour, then dip in egg, and again in flour. Set aside.
  3. Heat oil to 365-375°F. Fry chicken pieces in batches until golden brown, about 8-10 minutes. Transfer to a paper towel lined plate.
  4. For the Buttermilk Biscuits: Preheat oven to 450°F. Line a baking sheet with parchment paper.
  5. Combine flour, baking powder, salt, and baking soda in a bowl. Cut butter into dry ingredients until mixture resembles coarse crumbs. Stir in buttermilk.
  6. Work dough on a floured surface, folding it in thirds three times. Cut out biscuits using a 2.5-inch cutter. Bake for 15-17 minutes. Brush with melted butter.
  7. For the Hot Honey: Simmer honey and pepper flakes in a saucepan over medium heat. Remove from heat and stir in apple cider vinegar. Cool before use.
  8. To assemble: Split biscuits in half. Place fried chicken on each biscuit half and drizzle with hot honey. Serve with pickle slices if desired.

Notes

For a more intense flavor, let the hot honey sit overnight. Adjust the spice level by varying the amount of red pepper flakes.
