  • pepper to taste
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Toss diced potatoes in olive oil, garlic, salt, and pepper.
  3. Spread in a single layer on a baking sheet and roast for 35-40 minutes, turning halfway through.
  4. Garnish with parsley before serving.

Notes

Ensure the potatoes are spread out in a single layer for even roasting. You can add other herbs like rosemary or thyme for extra flavor.
