Ingredients
  

For the cream cheese spread
  • 1/2 tsp garlic powder
  • 4 oz cream cheese softened
  • 1/3 cup mayonnaise I prefer Hellmann’s
  • 1/4 tsp salt
  • 1/4 tsp dried dill
  • 1/8 tsp black pepper
For the roll-ups
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp sliced green onions
  • 1 cup diced vegetables broccoli, carrots, red bell pepper
  • 2 large flour tortillas 10-inch diameter

Method
 

  1. Prepare the Vegetables and Ingredients: Choose and chop your favorite veggies. Mince them extra small to ensure each bite contains a bit of everything. Allow the cream cheese to soften at room temperature.
  2. Mix the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese with mayonnaise, garlic powder, dill, salt, and pepper. Mix until smooth.
  3. Prepare and Fill the Tortillas: Warm the tortillas in the microwave for 15-20 seconds. Spread the cream cheese mixture evenly over each tortilla. Sprinkle the minced veggies, cheese, and chopped onion on top.
  4. Roll and Secure the Tortillas: Start at one edge and roll tightly. Secure with toothpicks. Place in the freezer for 20 minutes or chill overnight.
  5. Slice and Serve: Remove toothpicks and slice each roll into pinwheels. Arrange on a platter and serve.

Notes

Feel free to experiment with different vegetables or add some protein for variety. These roll ups can be made ahead of time and stored in the fridge for easy snacks throughout the week.
