Ingredients
  

For the marinade
  • 1 tbsp dried basil or 3 tbsp fresh
  • 1 tbsp dried oregano
  • 2 tbsp olive oil extra virgin
  • 1 tbsp balsamic vinegar aged
  • Pinch salt
  • Pinch pepper
For the salad
  • Optional fresh basil leaves torn or chiffonaded
  • 1/2 large red onion finely chopped
  • 1 1/2 cups cherry tomatoes quartered
  • 8 oz fresh mozzarella halved or torn
  • 1 cucumber peeled, scored, diced

Method
 

  1. In a small bowl, mix together olive oil, balsamic vinegar, dried oregano, dried basil, and a dash of salt and pepper.
  2. Stir until all the ingredients are well combined. Set aside to let the flavors meld together while you prepare the rest of the salad.
  3. Start by peeling a washed cucumber. Use a fork to scrape the skin up and down a few times to create a textured surface.
  4. Slice the cucumber thinly and then dice it into small pieces. Place the diced cucumber in a medium-sized bowl.
  5. Quarter the washed cherry tomatoes and add them to the bowl with the diced cucumbers.
  6. Thinly slice and dice a red onion. Add the onion to the bowl with the cucumbers and tomatoes.
  7. Slice mozzarella into bite-sized pieces, or use pearl-sized mozzarella balls if available. Add to the bowl.
  8. Pour the prepared marinade over the vegetables and cheese in the bowl. Mix everything well.
  9. Allow the salad to sit for 10 minutes before serving to let the flavors develop.

Notes

Feel free to adjust the amount of fresh basil for a more aromatic garnish. This salad is best served fresh but can be stored in the refrigerator for a short period.
