English Muffin Breakfast Pizzas

Ingredients
  

Egg Mixture
  • 8 large eggs
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon onion powder
Pizzas
  • 6 English muffins
  • 1/2 cup Heinz chili sauce
  • 1 1/2 cups shredded mozzarella and cheddar cheese blend

Method
 

  1. Preheat oven to 400F.
  2. Crack eggs into a medium mixing bowl.
  3. Add the heavy cream to the bowl.
  4. Whisk until the eggs are fully beaten.
  5. Add the salt, pepper and onion powder to the bowl.
  6. Whisk well again.
  7. Pour the egg mixture into a lightly greased non-stick saute pan over medium heat.
  8. Gently push the eggs around as they cook.
  9. Remove the pan from the heat and set aside.
  10. Slice the English muffins in half and place them, cut side up, on a baking sheet.
  11. Spread a thin layer of chili sauce on each English muffin.
  12. Spoon the egg mixture onto the English muffins.
  13. Sprinkle the shredded cheese on top of the egg.
  14. Sprinkle the remaining 1/4 cup of bacon bits on top of the cheese.
  15. Place the pan in the oven and bake the breakfast pizzas until the cheese on top is completely melted, 8-10 minutes.
  16. Serve and enjoy!

Notes

These breakfast pizzas are versatile; feel free to add some vegetables like bell peppers or spinach for extra nutrition. You can also use turkey bacon or omit the bacon for a vegetarian option.
