- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth.
- Mix in the egg, Baileys Irish Cream, and vanilla extract until well combined.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- Drop heaping tablespoons of the dough onto the prepared baking sheet. Bake for 10-12 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week. The Baileys gives them a unique flavor that pairs perfectly with coffee or milk.
