Cucumber Caesar Salad
  • 1 large English cucumber peeled and thinly sliced
  • 1/2 cup mayonnaise full-fat preferred
  • 2 tablespoons Parmesan cheese grated, plus more for garnish
  • 1 tablespoon lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon black pepper freshly ground
  • 1/8 teaspoon salt or to taste
  • 1/4 cup croutons homemade or store-bought
  • Grilled chicken or shrimp optional, for added protein

Method
 

  1. Peel the cucumber using a vegetable peeler. Slice it thinly using a mandoline slicer if available.
  2. Remove excess moisture by patting cucumber slices dry or salting and letting them sit, then rinsing and drying.
  3. In a medium bowl, whisk together mayonnaise, lemon juice, Dijon mustard, and Worcestershire sauce.
  4. Add minced garlic and grated Parmesan cheese to the dressing. Season with salt and pepper.
  5. Whisk dressing until smooth and creamy. Adjust seasonings to taste.
  6. In a large bowl, toss cucumber slices with the dressing until evenly coated.
  7. Add croutons just before serving and toss gently to combine.
  8. Garnish with extra Parmesan and black pepper. Serve immediately, adding grilled chicken or shrimp if desired.

Notes

This salad is best served immediately to maintain the crispness of the cucumbers and croutons. Prepare the cucumber and dressing separately if making ahead of time, combining them just before serving.
