- Peel the cucumber using a vegetable peeler. Slice it thinly using a mandoline slicer if available.

- Add minced garlic and grated Parmesan cheese to the dressing. Season with salt and pepper.
- Whisk dressing until smooth and creamy. Adjust seasonings to taste.
- In a large bowl, toss cucumber slices with the dressing until evenly coated.
- Add croutons just before serving and toss gently to combine.
- Garnish with extra Parmesan and black pepper. Serve immediately, adding grilled chicken or shrimp if desired.
