Ingredients
  

For the Sesame Ginger Dressing
  • 1/4 cup extra virgin olive oil
  • 1/2 tablespoons rice vinegar
  • 1/2 tablespoon sesame oil
  • 1 tablespoon soya sauce
  • 1/2 tablespoon ginger grated
  • 1 1/2 tablespoons honey
For the Salad
  • 7-8 mini sweet bell peppers mixed colors, sliced into rings
  • 4 Persian cucumbers sliced
  • 1/4 cup sesame ginger dressing
  • 1-2 tablespoons chili oil depending on how much heat you prefer
  • 2-3 teaspoons everything but the bagel seasoning

Method
 

  1. In a small bowl, whisk together the dressing ingredients.
  2. Add all salad ingredients to a mixing or serving bowl and toss to combine.
  3. Adjust chili oil and bagel seasoning to taste.
  4. Serve immediately or chill until ready to serve. Enjoy!

Notes

This salad is perfect for a light lunch or as a side dish. Feel free to adjust the level of spice by varying the amount of chili oil. The everything but the bagel seasoning adds a delightful crunch and flavor boost.
