- Heat a skillet over medium-high and cook the ground beef until browned. Drain the excess fat.
- Add the taco seasoning and diced onion to the beef. Cook until fragrant and the onion starts to soften.
- Place tortillas in the bottom of the crock pot, folding or tearing as needed to create an even layer.
- Sprinkle a generous layer of cheddar over the tortillas.
- Spread a portion of the seasoned beef mixture over the cheese.
- Continue layering tortillas, cheese, and beef until everything is used.
- Cover and cook on low for 2–3 hours, or until everything is hot and the cheese is melted.
- Scoop out hearty portions and top with sour cream, tomatoes, jalapeños, or cilantro.
