  • 1 lb ground beef
  • 8-10 small flour or corn tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 small onion diced
Optional Toppings
  • diced tomatoes
  • sour cream
  • jalapeños
  • chopped cilantro

Method
 

  1. Heat a skillet over medium-high and cook the ground beef until browned. Drain the excess fat.
  2. Add the taco seasoning and diced onion to the beef. Cook until fragrant and the onion starts to soften.
  3. Place tortillas in the bottom of the crock pot, folding or tearing as needed to create an even layer.
  4. Sprinkle a generous layer of cheddar over the tortillas.
  5. Spread a portion of the seasoned beef mixture over the cheese.
  6. Continue layering tortillas, cheese, and beef until everything is used.
  7. Cover and cook on low for 2–3 hours, or until everything is hot and the cheese is melted.
  8. Scoop out hearty portions and top with sour cream, tomatoes, jalapeños, or cilantro.
