  • 8 oz cream cheese softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup dried cranberries chopped
  • 1/2 cup pecans chopped
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon honey optional

  • Crackers or sliced baguette for serving

Method
 

  1. In a medium mixing bowl, combine the softened cream cheese and shredded cheddar cheese. Mix until smooth and well blended.
  2. Add chopped cranberries, pecans, parsley, garlic powder, onion powder, salt, and pepper. Drizzle in honey for a hint of sweetness if desired. Stir until all ingredients are evenly incorporated.
  3. Transfer the cheese mixture onto a sheet of plastic wrap. Shape it into a log and wrap tightly.
  4. Refrigerate for at least 2 hours, or until firm and easy to slice.
  5. Before serving, roll the chilled log in extra chopped pecans for added texture, if desired.
  6. Slice into rounds and serve with your favorite crackers or toasted baguette slices.
