Ingredients
  

Coleslaw
  • 4 cups shredded green or red cabbage
  • 1 large apple julienned or thinly sliced
  • 1/2 cup dried cranberries
  • 1 carrot shredded
  • 1/4 cup thinly sliced red onion optional
  • 1/4 cup chopped walnuts or sunflower seeds optional
Dressing
  • 1/2 cup mayonnaise or Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Method
 

  1. Wash and shred the cabbage finely using a sharp knife or food processor.
  2. Slice the apple thin (julienned style preferred).
  3. Shred the carrot and thinly slice the onion if using.
  4. In a separate bowl, whisk together the mayo (or yogurt), vinegar, honey, salt, and pepper until smooth and creamy.
  5. In a large mixing bowl, toss the cabbage, apples, cranberries, carrots, and onion together.
  6. Pour the dressing over the slaw and stir until everything is evenly coated.
  7. Cover and refrigerate for at least 30 minutes. This allows the flavors to meld and enhances the tangy sweetness.
  8. Just before serving, sprinkle with walnuts or seeds for added crunch.
