Cozy Holiday Thumbprint Cookies

Ingredients
  

Cookie Dough
  • 1 cup unsalted butter room temperature
  • 2/3 cup granulated sugar
  • 1 tsp vanilla extract or almond extract
  • 1/2 tsp kosher salt
  • 2 cups all-purpose flour
  • 1/4 cup jam apricot and seedless raspberry recommended
For Coating
  • 1/3 cup granulated sugar

Method
 

  1. In a large bowl, cream together the butter and sugar until light and fluffy—about 2-3 minutes.
  2. Mix in the vanilla (or almond) extract and salt.
  3. Slowly add flour and mix until a soft dough forms. It should feel like playdough—soft but not sticky.
  4. Wrap dough and chill in the fridge for 1 hour.
  5. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Scoop dough into 1-inch balls. Roll each one in granulated sugar, then place on the baking sheet.
  7. Gently press your thumb into the center of each cookie to form a small well. Fill each one with ½ tsp of your favorite jam.
  8. Bake for 12–15 minutes, or until edges are just lightly golden.
  9. Cool completely before storing (if you can resist!).

Notes

If your jam is thick, microwave it for 10 seconds to make it easier to spoon in. And don’t worry if some jam spills—it means someone will pick that one first. 😉 Did you make these with someone special growing up?
