  • 2 cups cottage cheese
  • 1 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 tablespoon orange zest

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a large bowl, mix together cottage cheese, rolled oats, dried cranberries, orange juice, honey, eggs, vanilla, baking powder, cinnamon, salt, and orange zest until well combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. Bake for 35–40 minutes, or until the top is set and lightly golden.

Notes

Let the bake cool slightly before cutting for easier serving. Store leftovers in the refrigerator for up to 4 days.
