Ingredients
  

Pimento Cheese Bites
  • 2 packages phyllo cups 15 count each
  • 1 cup pimento cheese homemade or store-bought
  • 1/3 cup red pepper jelly
  • 1/4 cup chopped pecans optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Place the phyllo cups on a baking sheet. Spoon 1 tablespoon of pimento cheese into each cup.
  3. Add a spoonful of red pepper jelly on top of the pimento cheese in each cup.
  4. If desired, place a pecan piece on top of each filled cup for an extra crunch.
  5. Bake for 8–10 minutes until the phyllo is golden brown and the filling is warm and bubbly.
  6. Let cool for 5 minutes before serving warm.

Notes

These bites can be made ahead and reheated just before serving. For a nut-free version, simply omit the pecans.
