Ingredients
  

Cookie Dough
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • vanilla powder or extract
  • honey or golden syrup

Method
 

  1. Preheat oven to 356°F (180°C).
  2. In a medium bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the flour, vanilla powder (or extract), and baking powder. Mix until just combined.
  4. Stir in the honey (or golden syrup) until evenly distributed.
  5. Divide the dough into 3 equal portions.
  6. Shape each portion into a log and place on a parchment-lined baking sheet, spacing them apart.
  7. Gently flatten each roll with your finger.
  8. Bake for 12–14 minutes, or until golden brown.
  9. Immediately cut the warm cookies diagonally while still on the baking sheet.
  10. Let the cookies cool completely before serving.

These cookies are perfect for any occasion and can be stored in an airtight container for up to a week. You can adjust the sweetness by varying the amount of honey or golden syrup.
