Ingredients
  

Mashed Potato Mixture
  • 3 cups chilled mashed potatoes
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • chopped chives to taste
  • flour as needed
  • garlic powder to taste
  • salt to taste
  • pepper to taste
  • parmesan cheese for coating

Method
 

  1. In a mixing bowl, combine the chilled mashed potatoes, egg, shredded cheddar cheese, chopped chives, flour, garlic powder, salt, and pepper. Mix everything well until it’s nicely blended.
  2. Shape the mixture into 1-inch balls.
  3. Roll each ball in Parmesan cheese to coat them.
  4. Preheat your oven to 400°F (200°C). Place the puffs on a baking sheet.
  5. Bake for 15-20 minutes, or until the puffs are golden brown and crispy.

Notes

Feel free to adjust the seasoning and cheese to your personal taste. These puffs are a great way to use leftover mashed potatoes.
