Ingredients

Bread Batter
  • 1 cup butter softened, unsalted
  • 8 oz cream cheese softened
  • 3/4 cup sugar
  • 2 teaspoon vanilla extract
  • 4 eggs
  • 2 cups flour all purpose
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups blueberries fresh, tossed in 1 tablespoon flour

Equipment

  • Loaf Pans

Method

  1. Preheat oven to 350 degrees and grease 2 loaf pans (9×5).
  2. In a large bowl, cream together the butter, cream cheese, and sugar.
  3. Add in the vanilla extract and eggs.
  4. Slowly add in the flour, baking powder, and salt.
  5. Once combined, carefully fold in the fresh blueberries.
  6. Pour batter (it will be quite thick, that is okay) into the prepared pans evenly.
  7. Place into preheated oven and bake for about 50 minutes, or until a toothpick comes out clean once inserted in center of bread.
  8. Remove from oven and allow to cool slightly before removing from pan and slicing!

Notes

This bread is best enjoyed fresh, but can also be stored in an airtight container for a few days. Feel free to substitute blueberries with other berries or add a glaze on top for extra sweetness.
