  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup almond flour
  • 2 tablespoons melted butter or coconut oil
  • 1/3 cup keto sweetener (erythritol or monk fruit)
  • 1 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/2 cup fresh or frozen blueberries
  • 2 tablespoons sliced almonds

Method
 

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish. This step is crucial to prevent sticking and ensure easy cleanup.
  2. In a blender, combine the cottage cheese, eggs, melted butter, sweetener, and almond extract until smooth. Blending the wet ingredients well ensures a uniform texture and helps distribute the flavors evenly.
  3. In a separate bowl, mix together the almond flour and baking powder. Incorporating the dry ingredients separately helps to avoid clumps and ensures the baking powder is evenly distributed.
  4. Pour the blended wet mixture into the dry ingredients and stir until well combined. The batter should be smooth but slightly thick.
  5. Gently fold in the blueberries, being careful not to crush them. This keeps them intact and prevents the batter from turning purple, preserving the aesthetic of the bake.
  6. Pour the batter into the prepared baking dish and scatter the remaining blueberries and sliced almonds on top. This not only adds visual appeal but also enhances the texture with a crunchy topping.
  7. Bake for 35–40 minutes, or until the top is golden brown and the center is set. A toothpick inserted in the center should come out clean, indicating it's done.
