- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish. This step is crucial to prevent sticking and ensure easy cleanup.
- In a blender, combine the cottage cheese, eggs, melted butter, sweetener, and almond extract until smooth. Blending the wet ingredients well ensures a uniform texture and helps distribute the flavors evenly.
- In a separate bowl, mix together the almond flour and baking powder. Incorporating the dry ingredients separately helps to avoid clumps and ensures the baking powder is evenly distributed.
