- 1 ¼ cups long grain white rice (uncooked)
- 1 (14.5 oz) can beef broth
- 1 (10.5 oz) can French onion soup
- 1 stick (½ cup) unsalted butter, cold and sliced into pats
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 425°F (220°C). Lightly grease an 8×8-inch baking dish.
- Spread the uncooked rice evenly across the bottom of the dish.
- Pour the beef broth over the rice, followed by the French onion soup. Stir gently to combine.
- Arrange the butter pats evenly over the top of the rice mixture.
- Cover the dish tightly with foil and bake for 25 minutes.
- Remove the foil and return to the oven to bake for another 25 minutes, uncovered.
- Let the dish rest for 5 minutes. Garnish with chopped fresh parsley and serve warm.
Notes
- Use long grain white rice for the best results; brown rice will require more liquid and cook time.
- Add rotisserie chicken or sautéed mushrooms to make it a complete meal.
- Leftovers keep well in the fridge for up to 3 days. Reheat in the microwave or oven.
